The Bitter Side of Aperitivo

The Campari Spritz is one of the simplest expressions of Italian aperitivo culture: bitter aperitif, sparkling wine, soda, ice, and orange.

The original Campari Spritz follows a classic 3-2-1 structure — three parts Prosecco, two parts Campari, and one part soda water — served over ice with fresh orange.

Campari itself dates back to 1860, when Gaspare Campari created the distinctive red bitter in Italy. It later became closely associated with Milanese aperitivo culture through Caffè Campari and the Camparino in Galleria.

What makes Campari so recognizable is its flavour. It’s intensely bittersweet, with prominent notes of orange, herbs, florals, and wood, finishing with a lingering bitterness.

For a non-alcoholic Campari alternative, the goal isn’t simply to find something orange or sweet. You want that same tension between citrus, botanicals, bitterness, and a little sweetness — enough structure to stand up to sparkling wine without disappearing.

Method

  1. Fill a large wine glass or Copa glass generously with ice.
  2. Add your chosen non-alcoholic bitter aperitif.
  3. Pour in the Colibri Spumante.
  4. Finish with soda water.
  5. Stir gently to combine.
  6. Garnish with a fresh orange slice.

3–4 oz premium tonic water or club soda

Build over plenty of ice and give it a gentle stir.
