Ingredients

2 tsp pear jam or 1 oz pear juice

1 oz freshly squeezed lemon juice

1 oz simple syrup

2 oz non-alcoholic whisky (Monday, Spiritless Kentucky 74, or Free Spirits Bourbon all work well)

1 egg white

Ice
Garnish: Thin pear slice and a preserved cherry (Luxardo-style or your favourite alternative)
Method

Add all ingredients to a cocktail shaker without ice.

Dry shake vigorously for about 30 seconds to emulsify the egg white and build foam.

Add ice and shake again for 10–15 seconds, until well chilled.

Strain into a rocks glass filled with fresh ice.

Garnish with a thin pear slice and a cherry.
