The Lemon Drop reimagines that structure through a Mediterranean lens. Greek non-alcoholic vermouth from Roots Divino Bianco brings herbal depth and brightness, while lavender syrup and lemon soda add a gentle floral-citrus lift. Finished with non-alcoholic sparkling wine and a splash of tonic, this zero-proof spritz feels layered, aromatic, and quietly indulgent.

It’s the kind of drink that works just as well for a sunny patio gathering as it does for a quiet early evening at home — refreshing, composed, and deeply satisfying without trying too hard.

Ingredients

  • 2 oz Roots Divino Bianco — Non-Alcoholic White Vermouth

  • 2–3 oz Oddbird Spumante (or your favourite non-alcoholic sparkling wine)

  • ¼ oz lavender simple syrup (we use Simply Syrup Lavender)

  • Splash of lemon soda (PC Brand Diet Lemonade works beautifully)

  • Ice

  • Fresh lemon wedge or wheel, for garnish


Method

  1. Fill a Copa or large wine glass generously with ice.

  2. Add the Roots Divino Bianco.

  3. Pour in the non-alcoholic sparkling wine.

  4. Add the lavender simple syrup.

  5. Top with a splash of lemon soda.

  6. Stir gently to combine.

  7. Garnish with a fresh lemon wedge or wheel.
